| This
is a dense, sweet and fruit-filled dessert.
Serve with light ice cream or whipped cream
on the side. Sliced apples tossed in a little
bit of lemon juice would also make a great
topping. |

| Ingredients: |
4-5
cups bread cubes (day-old French bread is
my favorite)
2 apples, large dice
1/3 cup raisins
2 cups
8th Continent™Soymilk Vanilla
2/3 cup brown sugar
1 tsp. Cinnamon
1 ½ tsp. Vanilla extract
3 egg whites

| Instructions: |
- Preheat oven to 375 degrees. Spray a
1 ½-quart casserole dish with nonstick
spray.
- Combine bread cubes, apples and raisins
in a large bowl. Add soymilk and sugar;
mix thoroughly until all of the bread
is wet from the milk. Let stand for 20
minutes.
- Combine egg whites, cinnamon and vanilla;
add to bread mixture and mix thoroughly.
Pour into the prepared dish. Bake uncovered
for 35 – 45 minutes, until set and
lightly browned on top.
